A blend designed for milk. The Indian component provides malty, chocolate body, and the Chinese red adds sweetness, complexity, and a lingering spicy finish, providing a smooth, rich, fudgy milk tea.

FENG QING Y IN ZHEN - $115.50/kg White tea (Withered)
Da Si village, Lincang, China

A white tea made from solely the young, tender shoots (‘buds’) of the tea plant. Picked, withered, and dried only, this tea yields a delicate, slippery, pine needle flavour, with a gentle aroma of vanilla and forest floor.

Red tea (Withered, fully oxidised, sun dried) Fengqing, Lincang, China

A traditional style of Yunnan red tea presenting a layered malty complexity, a rich dried fruit sweetness and very subtle cacao finish. These characteristics are unique to the sun drying process of this particular material.

LU SHAN YUN WU - $132/kg
Green tea (Withered, pan-fixed, rolled, dried) Lu Shan, Zhejiang, China

The laborious hand processing of this particular Lu Shan (Lu Mountain) material yields a well-balanced umami-sweet, vicious yet easy-drinking liquor. Soft ocean spray and spring garden aromas give way to a lingering, fresh aftertaste.

Semi-oxidised/Wulong (Withered, rolled, partially oxidised, shaped and dried, roasted) Wuyi Shan, Fujian, China

A unique dwarf varietal makes this an interesting rock oolong (yancha) compared to the usual Wuyi Mountain examples. A complex, thick mineral body with a honeysuckle sweetness, and a lingering perfume. Highly aromatic with a subtle peatiness in the liquor.

MO LI LONG ZHU (Jasmine Pearls) - $160/kg
Scented green tea (Withered, pan-fixed, rolled, dried, scented)
Jiangsu/Guangxi, China. Certified Organic.

High quality Autumn harvest material from Jiangsu is processed as a green tea, and then scented with fresh Organic Jasmine blossoms from Guangxi overnight as the flowers bloom, before being dried once more. A well-balanced and sweet, aromatic jasmine, with an easy drinking green tea base.

NATIVE MINT - $140/kg Tisane (caffeine free)

A mix of indigenous botanicals; Peppermint Gum (Eucalyptus Dives), Roundleaf Mint (Prostanthera rotundifolia), and Anise Myrtle (Syzygium anisatum). The taste is obviously minty, but with earthy tones and a sweet finish provided by the anise myrtle. Not overly sweet.

NATIVE LEMON - $140/kg Tisane (caffeine free)

A mix of indigenous botanicals; Lemon Scented tea tree (Leptospermum petersonii), Strawberry Gum (Eucalyptus Olida), and Cinnamon Myrtle (Backhousia myrtifolia). The taste is a combination of citrus, earthy, sweet, and spicy. Many complex aromas arise that are unique to the Australian bush.
